炒制过程中没有放盐,因为辣酱有咸味,肉在上浆时已经有底味。这个菜提前调好碗汁炒的时候就不用手忙脚乱的了。青椒丝没有先行炒制,把青椒丝放在漏勺上,肉丝滑好后直接将肉倒在青椒丝上烫一下就可以。
